It’s so fun to see salads sweeping the Internet. When foods started going “viral”—who remembers rainbow bagels?—we weren’t sure the humble salad would ever get its moment. But in 2022, anything is possible, and it seems like every day there’s a new “it” salad that we can’t wait to try.
One salad connoisseur who’s caught our eye lately is Melissa Ben-Ishay, also known as Baked by Melissa—who, as it turns out, has a knack for making stunning salads in addition to her signature, tie-dye-colored cupcakes. Her TikTok-famous Green Goddess Salad starts with finely chopped cabbage, cucumbers and alliums and then gets topped with a homemade vegan dressing made of blended spinach, basil, nutritional yeast and more.
The best part? You skip the fork and eat it with chips.
We’ve tried Melissa’s recipe (and love it!) but between the chopping and the blending, it’s not always weeknight friendly. If you want to hop on the fun of making a viral TikTok recipe that’s actually delicious—but do it, say, on a busy work-from-home Wednesday—then read on, because this shortcut recipe is for you. (Yes, you’ll still have to chop, but your blender gets a night off, and we’d call that a win.)
Vegan Green Goddess Salad (inspired by Baked by Melissa)
Ingredients:
– ½ small head green cabbage, diced
– 1 package Gotham Greens Romaine, finely chopped
– 3-4 baby cucumbers, diced
– ¼ cup of chives, finely sliced
– ¼ cup Basil, finely sliced
– 4 green onions, sliced
– Gotham Greens Vegan Goddess Dressing
– Your favorite sturdy chips for dipping
Instructions:
In a large bowl, add cabbage, Greenhouse Crunch, cucumbers, chives, basil, green onions and a very generous drizzle of Gotham Greens Vegan Goddess Dressing.
Toss to combine.
Skip the fork and eat with chips.
