Avocado Lime Ranch Chicken Nachos

Creamy, bright, cheesy nachos packed with veggies and chicken marinated in our new Avocado Lime Ranch. We couldn’t dream up a better combo for the Big Game if we tried.   

You’ll Need:
For the Chicken: 

  • 1 lb boneless skinless chicken breasts
  • ¼ cup + 3 tablespoons Gotham Greens Avocado Lime Ranch Dressing, divided 
  • ½ teaspoon cumin 
  • Dash of salt and pepper 

For the Nachos: 

  • 1 (7.5-oz) bag Zack’s Mighty Avocado Oil Sea Salt Tortilla Chips 
  • 4 oz shredded Cheddar cheese  
  • 4 oz Monterey Jack cheese 
  • 1 cup black beans 
  • ½ pint cherry tomatoes, quartered 
  • ½ cup salsa  
  • ¼ cup Gotham Greens Avocado Lime Ranch Dressing 
  • ¼ cup sliced green onions 
  • 1 avocado, peeled and chopped 
  • 1 jalapeño, thinly sliced 

How to Make It: 

  1. Combine chicken, ¼ cup of Gotham Greens Avocado Lime Ranch Dressing, cumin, salt, and pepper in an airtight container or storage bag. Shake well to coat chicken in dressing. Refrigerate for 30 minutes or overnight to marinate.

  2. Preheat oven to 400 degrees Fahrenheit.
  3. Spray a baking sheet with cooking spray and add the marinated chicken. Bake for 25-30 minutes or until a thermometer reads 165 degrees Fahrenheit when inserted into the thickest part of the chicken breast. Allow to cool for 5 minutes. Shred chicken with forks or in the bowl of a stand mixer on low speed. Toss the shredded chicken with the remaining 3 tablespoons of Gotham Greens Avocado Lime Ranch Dressing. Taste and adjust seasoning if needed.

  4. Add tortilla chips to a baking sheet. Top with the shredded chicken, cheese and black beans.

  5. Bake for 8-10 minutes or until the cheese is melted. 

  6. Add the rest of the toppings (tomatoes, green onion, salsa and Gotham Greens Avocado Lime Ranch Dressing). Serve and enjoy! 

Note: 

  • You can also use pre-cooked chicken or rotisserie chicken for quicker prep. Just shred the chicken and then toss in the ¼ cup of Gotham Greens Avocado Lime Ranch Dressing, cumin, salt and pepper.
